GARDEN to TABLE RAINBOW STEW
It started with a book by Cathryn Falwell titled Rainbow Stew. We read it over the weekend and inspiration struck. The Sapna garden has been steadily growing and was definitely in need of a pick-me-up. So, this week we harvested many of our vegetables planted in the fall. Kale, bok choy, cabbage, kohlrabi and swiss chard were all ready! Kids chopped away, making kohlrabi apple slaw, which we put on top of a bed of baby lettuce greens (pictured above). It got mixed reviews, but many gave the slaw a try and liked it!
That afternoon the mud kitchen came alive, with the discarded lettuce leaves and plants taking center stage. These mud stews were lovingly cooked and tended by our Sapna learners, then shared among the group. Yummo!
We went home on Thursday afternoon, Juno giddy with excitement to help make the (real) rainbow stew. We chopped, cooked, and boiled until the house began to fill with a mouthwatering aroma. We couldn't wait to share it with our Sapna family!
On Friday, the soup heated in the crock pot throughout the morning and filled the Sapna room with that same delicious smell. Once it was heated, bowls + bread were passed around, a little cheese on top and... SLURP! The rainbow stew was loved by all and soon ran out. It felt like a family, sitting around the table, laughing and sharing. We are looking forward to creating more opportunities to grow, cultivate, and cook food together. <3
